I have heard this played several times - once with orchestra.
I just can't get enough of it! What is it called and where can I find a good recording of it?

It's the "Vokaliz" [Vokaliz] by Sergei Rakhmaninov/Rachmaninov/Rachmaninoff, op. 34, no. 14.

The classic theremin recording is by Clara Rockmore, on her album [i]The art of the theremin[/i].

There is a very nice video (on youtube I think??) of Thomas Grillo playing it on a B3 Theremin...

Yes, it's a great version. he plays it on a burns b3. Lovely sound.
But I have to say I like this version better:
